Recipe: Veggie Garden Salad

There’s nothing like a fresh garden salad to bring in the new year. Here’s winemaker Ben Gould’s from Blindside Veggie Garden Salad recipe for two.

VEGGIE GARDEN SALAD

INGREDIENTS:
Chopped cucumber
Red onion
Tomatoes
Torn fresh basil
Black olives
Fresh mozzarella

DRESSING
2 parts red wine vinegar
1 part olive oil
Splash of balsamic
Salt & Pepper to taste

METHOD:
Step 1
Chop up all ingredients

Step 2
In a separate bowl stir all the dressing ingredients in a bowl

Step 3
Pour dressing over chopped veggies

Step4
Serve with a glass of Blindside Organic Chenin Blanc.
