Caroline’s favourite mulled wine recipe

Here’s winemaker Caroline Dunn’s favourite mulled wine recipe. It’s the perfect drink to keep Angels warm during cold winter nights.
INGREDIENTS
½ cup of sugar
strips of zest from 1 orange
3 dried figs, whole
6 cloves
1 cinnamon stick
1 bay leaf
4 slices fresh root ginger, bruised
½ teaspoon grated nutmeg
2 anise stars
½ cup fresh orange juice, strained
fresh apple slices to garnish
1 bottle Shiraz
METHOD
Place sugar, orange zest, figs, cloves, cinnamon, bay leaf, ginger, nutmeg, and star anise into a saucepan with just enough water to cover the sugar. Boil for 5 minutes, stirring to dissolve the sugar, until the mixture resembles a thick syrup. Turn down the heat and add the strained orange juice, apple slices, and Shiraz.
Heat gently until warm and serve to enjoy!
